Garnish Prep
A little prep work for the “chicken & noodle” soup—vegetable consommé with spaghetti-squash “noodles” and sautéed chicken mushroom “chicken bites”
Eggplant Salad
Stuffed Eggplant—Marinated & roasted striped eggplant, stuffed with: shredded cabbage, roasted cauliflower, wheat berries, raw tomatoes, and dressed with a shallot-apple vinaigrette
Oyster Mushroom Lasagna
Lasagna—Sautéed oyster, button, and shiitake mushrooms, layered with a zucchini-tomato-and-onion confit, fresh pasta, and a Grimbergen and Camembert sauce
Butternut Squash Ravioli
Butternut Squash Ravioli—Butternut squash ravioli in a sage and champagne cream sauce, garnished with a fried banana-bread crumble and Grand-Marnier-poached cranberries
